Since then, I've been on a seemingly fruitless search for healthy ways to dress salads. Store-bought fat-free Italian dressing, it turns out, gets old. Homemade dressings usually look okay until you get to the bottom of the recipe and learn that it really features a cup of oil and a cup of sugar. No bueno.
Well, the search ends here. I am proud to present not one but TWO healthy salad dressings for your eating pleasure. Hopefully there will be more to come.
Apple Juice Vinaigrette

1/3 cup apple juice
3 T. water
3 T. rice vinegar
3 T. lemon juice
3 T. olive oil
2 tsp. sugar
2 tsp. dijon mustard
1 tsp. salt
3 T. water
3 T. rice vinegar

2 tsp. dijon mustard
1 tsp. salt
Whisk together and drizzle over salad. Or combine in a food processor or blender to combine the oil in a little better. Store leftovers in the fridge. 54 calories per 2-Tablespoon serving.
Orange Citrus Vinaigrette

2/3 cup rice wine vinegar
1/3 cup orange juice
2 tablespoons olive oil
2 tablespoons chopped fresh cilantro
1 tablespoon Dijon mustard
2 teaspoons minced garlic1 teaspoon honey
Whisk ingredients together (or use a blender/food processor). Store leftovers in refrigerator. 32 calories per 2-Tablespoon serving.
