Goulash

This is a classic "dump-it-in-the-pot" dish. Substitute at will! Throw in your leftovers! Make it differently every time! It's also a great way to use up some food storage items. I'm pretty sure it bears little to no resemblance to its original Hungarian roots, but it's also probably healthier anyway.


This comes from, once again, our friend Trainer Momma. Her version calls for ground beef, which I didn't have. So I threw in my best friends, black beans. They're cheaper anyway.


Goulash
Adapted from: Trainer Momma


Ingredients:
1 lb. lean ground beef or turkey (or 1 can each black beans and corn, drained and rinsed)
2 large cans of tomato sauce, no salt added (I used one can sauce, one can diced tomatoes)
1 tsp garlic salt
1/3 cup dry minced onion
1 tsp pepper
oregano (sprinkle liberally)
1/2 lb. whole wheat pasta noodles (elbow, shell, rotini, etc.)
1 zucchini, shredded
1 medium sweet potato, shredded

Directions:
Cook whole wheat pasta according to directions.
In a large pan, brown the beef.  Drain.  Add the spices, tomato sauce, pasta, zucchini, and sweet potato.  Stir, cover with lid, and simmer on medium – low for 20-30 minutes or until sweet potatoes are tender.
Top with grated cheese if desired.
