Apple Muffins

After a week of being under the weather, the only thing that sounded good was CARBS. Bread, fruit, cookies, you name it. Luckily Trainer Momma came through for me again. The secret to these wonderful muffins is the orange peel. Sure, they'll taste good without it. But if you have an orange lying around, put some peel in them and your life will never be the same. Yum!


Apple-Raisin Muffins

1 cup whole wheat pastry flour
1 cup quick oats
1 Tb baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 Tb freshly grated orange peel
1/4 cup sugar or honey
1/2 cup unsweetened applesauce
1/2 cup skim milk or almond milk
1 egg or 1 T. ground flax seed + 3 T. water
2 Tb canola oil
1 apple, diced
1/3 cup raisins

Preheat oven to 400 degrees.

Mix all ingredients. Stir until just moistened. Spray muffin tins with nonstick cooking spray. Fill muffin tins 2/3 full.

Bake at 400 degrees for 12-14 minutes or 10 minutes for mini-muffins. Makes 14 muffins or 40 mini muffins.

Muffins are 82 calories. Mini-muffins are 29 calories.
