I hate thawing things on the countertop. That requires hours of planning ahead. Room temperature butter? Yeah right. But here are a few tips I've learned:
1) The mug method: Place butter or other item you want to thaw without melting/cooking in the microwave with a mug of cold water. Microwave in 30-second intervals until desired thawed-ness. This works really well for butter.
2) The water method: Things thaw much faster in water than they do in plain old air. Frozen fish, for example, with thaw completely in lukewarm water in 5-10 minutes. So will frozen bananas. If you need room temperature cream cheese, stick it in warm water for a few minutes. It's like magic.
